We’ve been rediscovering primitive trails and spending weekends back country camping, while eating gourmet!
We don’t mind packing a little extra for an over night camp. A few extra clothes and a few extra comforts make an overnight camp so much more enjoyable!
On this trip, I packed a small tarp. Normally on our long distance hikes we wouldn’t do this, it just adds weight to a pack, but for an over night when there might be rain, it’s no problem for me! Since we’re not packing as many clothes and food, a few extras can really make a one night back country camp into something special. The trick is to not go overboard and bring everything, just make sure your pack is still light enough for a one nighter.
Maria is in charge of food, and when it’s an overnight back country camp, gourmet is on the menu!
Again, we don’t mind the extra weight, eating amazing food deep in the forest near a brook or river or oceans edge makes it taste that much better!
This back country hike took us to a camp that is used by many in the summer and early fall months, but this weekend, there was nobody!
Our great luck!
First we hiked to a small cove with a waterfall, then to our own private beach next to a river. Our supper was pulled pork with 4 cheese mashed potatoes, and 2 Bite Brownie for desert.
The next morning for breakfast, we enjoyed pancakes grilled in our new fry pan over an open flame, infused with bacon, topped with maple syrup and real butter. Washed down with Starbucks Instant Mocha!
